Imagine being convinced that today’s degenerative diseases are the direct result of immune dysfunction and toxin build-up in our bodies, and that both of these factors can be traced back to malnutrition and poor dietary habits! There are three main types of disease fighting nutrients and immune system enhancer often missing from the foods we eat; phytochemicals, antioxidants, and polysaccharides. Given that these delicate, living, life-force nutrients are only present in plant foods in small quantities in the first place, they can be easily destroyed by heat and other processing techniques. It should not be surprising that we are not getting enough of them.
So why is such a high percentage of disease fighting nutrients missing from our food today? It is because of the way food is grown, harvested, processed, and preserved. In today’s corporate world, the greed for profits is what’s driving what we eat, not health! Our lack of education about what is proper nutrition, our addiction to manufactured taste, as well as our love of the convenience of process foods contributes to the problem. The funny thing is that most of us already have the idea that the foods we are eating (or not eating) are not giving us complete nutrition and in many cases even making us sick. Unfortunately, it is almost impossible to totally avoid these bad foods and at the same time obtain proper foods; as a result many people have turned a blind eye and chosen to ignore these facts and their consequences. Even when we are sick, we have been so (brain-washed) misinformed by society that we may continue to remain ignorant.
Thanks to Dr. Chen, we now know the reason why so many people get sick even though they tried to live in healthy lifestyles, eating food from all the major food categories, including fresh fruits and vegetables. Although it is true that the very best cure for diseases and illnesses are eating vegetables, fruits, and herbs, many people who tried to heal themselves with this method failed. The reason they fail is not due to the failure of the concept of healing through food, but because it is almost impossible to get all the required nutrients we need from the fresh fruits and vegetables we are purchasing from supermarkets today. Not only these vegetables and fruits laced with pesticides, but factors in the way they are grown, harvested, and processed. How can our fruits and vegetables be missing so many nutrients but still taste almost the same?
You must remember that we are only talking about the disease-fighting and healing nutrients, not the carbohydrates and proteins which are largely responsible for taste and energy. Carbohydrates, water, sugars, and inorganic salts (sodium, potassium, calcium etc.) are still abundant in fruits and vegetables purchased from the marketplace. These fruits and vegetables still taste relatively great because it is not these nutrients that are missing! Unfortunately, it is the cancer-fighting nutrients such as phytochemicals, antioxidants, and polysaccharides that are mostly missing from the foods. Given that these disease-fighting agents are normally present only in small amounts, not growing crops in the right environment will have a huge impact on how much is present in the harvested product. Furthermore, these are very delicate and sensitive complex nutrient molecules, the little amount there was in the first place is easily destroyed by heat, and modern food processing techniques. In addition, fruits and vegetables start losing vital nutrients immediately after they are harvested because these fruits are still living. As long as the cells of the fruits remain alive, the fruit must continually consume and use the vital nutrients stored within it in order to stay alive. As a result, not only must plants be grown in the proper soil and harvested at the right time, they must be processed and/or eaten immediately after harvesting to maximize how much of these disease-fighting agents we can obtain from them. Even if you purchase organically grown fruits and vegetables, it can sometimes take days for the food to get to your table. By that time, it is possible that they no longer contain any of the disease-fighting nutrients, (phytochemicals, antioxidants, and polysaccharides).

This story has pretty much been the life of Dr. Jau-Fei Chen. She has even brought her findings to the American Institute of Cancer Research. They agreed with her findings! Unfortunately, at the conclusion of that meeting, it was stated that the job of educating the public to (simply) eat more of the right fresh fruits, vegetables, and herbs daily, as well as to stop eating too much processed foods was too big for the institute. Furthermore, the institute stated that the job should be the work of the government because simply educating people about nutrition was not going to be enough to make an impact; the government would have to pass a bill to control how food is grown, harvested, processed, and preserved, and this bill would have to go as far as legislating how food can be prepared in food establishments and even in our own homes. Can you imagine the uproar! So what do you think the government said?
They said, “Wouldn’t that take away personal liberty? Don’t people have the right to decide what they eat? Think about the economic impact! Economic power today is heavily structured around the fast food and processed food industry. It would virtually cripple our economy to legislate what food can be served and how it should be grown, harvested, and processed. Until our economic structure evolves to the point that it is no longer so dependent on processed food, and until the public becomes more educated about Nutritional Immunology, our hands are tied." Just as they were tied when the crisis was cigarettes, smoking and lung cancer many years ago.
Dr. Jau-Fei Chen knows that her discoveries will save lives and that this is too important and exciting to have to wait for the public to be ready to listen or for the government to become involved. About Dr. Jau-Fei Chen
Dr. Jau-Fei Chen had a dream of bringing Nutritional Immunology to everyone, so she started her own company, E. Excel. Her expert knowledge of the Immune System has earned her several awards.
Dr. Chen’s brilliant academic career began at an early age when she became the youngest graduate of her high school. Graduating with honors as class valedictorian at the age of 15, Dr. Chen went on to become the youngest graduate of Brigham Young University at age of 19 when she earned her Bachelors Degree in microbiology. Continuing her academic studies, Dr. Chen received her Master of Science in microbiology with a minor in biochemistry in 1983 - Specializing in what interested her most - immunology.
Dr. Chen continued her work in immunology and in 1988 she earned her Doctorate Degree. She taught upper-level immunology and research techniques courses at Brigham Young University for five years, and has conducted extensive cancer research for the past 10 years.
Dr. Chen has supplemented her training in the US by working with scientists and herbalists in China. She has also presented significant papers and spoken by invitation before numerous scientific organizations and medical universities around the world, including: The National Federation of Immunology in Washington D.C.; Taiwan University Medical School, Tai-Nan Medical College, and Tai-Chang Medical College in Taiwan; the Pharmacists Association of Korea in Seoul, Korea; the Medical University of Malaysia, and the Medical University of Singapore to name but a few.
Dr. Chen has also been invited to lecture at a number of universities in the United States. Most recently, she was invited to visit the John Hopkins School of Medicine and the Philadelphia College of Osteopathic Medicine - two of the top medical schools in the United States - where she met with professors to share the latest research findings regarding the relationship between nutrition and the human immune system.
This spring, Dr. Chen was also asked by the Chinese government to lecture at a number of universities in the Republic of China and Hong Kong. She discussed her latest experimental data with university faculty and taught the concepts of Nutritional Immunology to students at the Beijing Medical University, Shanghai Medical University, Sun Yat-Sen University of Medical Sciences, The Chinese University of Hong Kong, Hong Kong Baptist University, and the Hong Kong University of Science and Technology.
A leading scientist and business woman, Dr. Chen has received several awards for her leadership and service. In 1992, she received the highest honor from the Chinese Cultural Center of Coordination Counsel for North American Affairs - a distinguished award given annually to young individuals of Chinese decent who display outstanding leadership and contribution in the sciences, arts, or humanities. Then the Academia Mexicana de Medicina Tradicional , the third largest such academy in the world, awarded Dr. Chen with the Martin De La Cruz Award for her contribution and meritorious service in the area of traditional/alternative medicine. She was presented with the award at the Sixth International Congress of Traditional and Folk Medicine.
In December of 1993, Dr. Chen received the Entrepreneur of the Year Award from the government of Taiwan - the only woman to have done so. Then in March of 1995, she was chosen by the World News Organization as one of the top 100 most influential Chinese individuals in America. As a winner, she was featured in the book, The Ultimate Winners along with other exceptional individuals such as Dr. Samuel C. C. Ting and Dr. Chen Ning Yang, both Nobel prize winners for their study of physics, and astronaut Dr. Taylor G. Wang.
In 1996, Dr. Jau-Fei Chen was named the 1996 Outstanding Woman of the Year by the Chinese Women’s Association of America for her meritorious contribution to the scientific and medical communities through her study of Nutritional Immunology, and for her example to all modern women. Dr. Chen was also presented with awards by government officials such as California Governor Pete Wilson, Senator Milton Marks, and the Mayor of San Francisco.
Most recently, Dr. Chen received two first place awards - the only candidate to do so - at the annual Conference of World Traditional Medicine. She received one award for her book, Plant Foods and Immunology: A Scientific Approach - one of 2,300 documents submitted. The other award was for her formulation of Millennium, one of E. Excel’s beverage products.
The proud mother of two girls and one boy, Dr. Chen currently serves as the Chairman of the Board of Directors of E. Excel International, Inc. - an international corporation with facilities and operations in the United States, Taiwan, Korea, Malaysia, Thailand, Philippines, Colombia, Singapore, Japan, France, and Luxembourg - which specializes in the formulation and manufacture of concentrated herbal products based upon the science of Nutritional Immunology.
