What is the Cause of Illnesses and Diseases? There are two basic causes to degenerative diseases: immune dysfunction due to toxicity & nutritional deficiency. Toxicity arises from agricultural chemicals poisoning our crops, food processing chemicals, and from medical and over-the-counter drugs. Deficiency arises from poor soil and depletion of nutrition in processed foods. As a result, the body's major defenses are weakened: the immune system, enzyme system, mineral balances, organs, and hormones. In mainstream medicine, symptoms of diseases are treated with drugs, further increasing the toxic damage, since all drugs are liver toxic. Why Do Our Foods Have Very Little Nutritional Value? It’s bad enough that some processing techniques can destroy vital nutrients, however, not processing foods right away after harvesting also results in loss of vital nutrients, because we are removing from the source. Vegetables and fruits are alive and are still alive even after harvesting! As long as the cells of the vegetables and fruits are alive, they must continually consume vital organic nutrients stored within them in the metabolic process which keeps them alive. This is evidenced by the very fact that fruits keep ripening even after harvesting. While the fruit was still on the plant, used nutrients were continually being replaced by the plant, but now that it is no longer on the plant once harvested, it can easily lose up to 90% of the disease fighting nutrients and immune system enhancers. Keep in mind that we are not talking about carbohydrates, minerals, fats, and proteins that give a plain taste, but about vital disease fighting chemicals and immune system enhancers, namely phytochemicals, antioxidants, and polysaccharides. Is it any wonder why all types of diseases are on the rise? Antioxidants, phytochemicals and polysaccharides offer unlimited hope in the fight against chronic diseases. In fact, statistics show that at least one-third of cancers can be prevented if we eat a balanced diet and exercise often. Now that is food for thought. If 90% seems rather high, please keep in mind that we are only talking about the disease fighting nutrients and immune system enhancers, not the carbohydrates, sugars, fats, and proteins that gives food most of its taste. The latter provide energy and building material for your body, but do little for helping the immune system fight illness or disease! Still, 90% is a figure almost too big to comprehend; it is as if we were just making it up. Many people will not believe that this is true, and will even dismiss the figure as propaganda. But until they accept its reality, they are not going to get better. This is why the very first Vital Healing Step is Education. Education is the Key. There are millions of phytochemicals and science has not even begun to name all of them. However, scientists have grouped the most common phytochemicals into four broad categories, namely indoles, isothiocyanates, flavonoids and isoflavones. Each plant also contains its own unique variety of phytochemicals. For example, indoles, one of the larger groups of phytochemicals, is available in vegetables such as cauliflower, broccoli, cabbage, and turnips. Indoles-3-carbinol has been known to reduce risk of cancer, such as breast and ovarian cancer, by acting on a precursor to the female hormone estrogen and causing it to break down into a harmless form. Isothiocyanates comprise two groups: PEITC and sulforaphane. PEITC is found mainly in turnips and cabbage and is shown to inhibit lung cancer and prevent carcinogens from binding to DNA. Sulforaphane, contained in broccoli, cauliflower and cabbage, eliminates carcinogens in cells. Besides onions and sweet potatoes, flavonoids are also found in citrus fruits and many types of berries. Flavonoids have anti-cancer properties-they prevent cancer-causing hormones from attaching to normal cells. They also inhibit enzymes responsible for cancer cell metastasis. Isoflavones are found in soybeans. Soy isoflavones like genistein, daidzein and glycitein offer great disease resistance. Other than lowering serum cholesterol levels, they also reduce the probability of coronary heart disease as well as the risk of osteoporosis in postmenopausal women. While some plants are rich sources of a particular phytochemical, others contain myriads of phytochemicals. For example, a tomato-rich diet has been said to reduce DNA breakdown through oxidation by up to 40%. This is because tomatoes are bestowed with lycopene, a cancer-fighting phytochemical. The prickly pear cactus, in contrast, contains not one beneficial phytochemical but thousands. It cannot be repeated enough that a varied diet is very important for us to obtain as many varieties of phytochemicals as possible. Lack of these phytochemical nutrients such as thiamin B, riboflavin B, niacin B, folic acid, pantothenic acid, pyridoxine, biotin, cyanocobalamin and L-ascorbage are known to cause depression, anxiety, restlessness, forgetfulness, insomnia, and irritability. All these phytonutrients are easily destroyed when we don't consume food after harvesting. |

Polysaccharides are long chains of sugars commonly found in some mushrooms. Research ha shown that mushroom polysaccharides can inhibit tumor growth by activating immune cells. Polysaccharides help to balance the immune system an enable it to destroy existing cancel cells and viruses. Polysaccharide-rich mushroom extracts are also used in anti-viral medication. In the 1960's, scientists discovered that polysaccharides possess anti-cancer properties. However, each type of polysaccharide has its own unique ability and healing effect on certain cancers. Among polysaccharide-rich mushrooms, the following five are most lauded for their anti-cancer and anti-viral properties. The agaricus blazel murill mushroom which helps to increase immune cell activity in the body. The coriolus versicolor mushroom which contains a beta-glucan which has been shown to have anti-microbial, anti-viral and anti-tumor properties most effective agents for treating chronic illnesses. The shiitake mushroom known to treat colds, flu, poor blood circulation, upset stomach and fatiuge. The maitake mushroom is beneficial to enhance the immune function as well as inhibit tumor growth. And last the danoderma lucidum mushroom is used during chemotherapy and radiotherapy to reduce side effects such as fatigue, appetite loss, hair loss, bone marrow suppression and infection and enhance quality of life. There are three main types of disease fighting nutrients and immune system enhancers often missing from the foods we eat; phytochemicals, antioxidants, and polysaccharides. Given that these delicate, living, life-force nutrients are only present in plant foods in small quantities, in the first place, and that they are easily destroyed by heat and other processing techniques, it should not be surprising that we are not getting enough of them. In addition, fruits and vegetables start losing vital nutrients immediately after they are harvested because these fruits are still living. As long as the cells of the fruits remain alive, the fruit must continually consume and use the vital nutrients stored within it in order to stay alive. As a result, not only must plants be grown in the proper soil and harvested at the right time, they must be processed and/or eaten immediately after harvesting to maximize the amount of these disease-fighting agents we can obtain from them. Even if you purchase organically grown fruits and vegetables, it can sometimes take days for the food to get to your table. By that time, it is possible that they no longer contain any of the disease-fighting nutrients, (phytochemicals, antioxidants, and polysaccharides). It is almost impossible to get all the required nutrients we need from the fresh fruits and vegetables we are purchasing from supermarkets today.
